So over the Easter weekend I couldn’t have many Easter eggs other than dark chocolate which I’m not a huge fan of so instead I baked!!
I enjoy baking and trying to find decent gluten and lactose free recipes sometimes is not very easy! Luckily I found one which didn’t include many ingredients but made the most incredible fudge like cookies!!
All I had to do was throw 2 cups of gluten free flour, 1 and 1/2 cups of sugar, 1 1/2 cups of cocoa. I then mixed all of this in my mixer and added a pinch of salt. I then added three eggs which could be substituted if wanting a vegan mix. You then also have to add 1/2 cup of melted butter and 1/4 cup of oil- I chose coconut and then a teeny bit of vanilla essence.
I then scooped onto a baking tray and baked for 9 minutes. They look a little underdone but after left to cool they were fine!
I managed to get everyone to try them and they loved them!!
