Sunday Breakfast

When I have more time I usually do like cooking rather than having oats or smoothies.

I decided to cook some asparagus, mushrooms and tomatoes first and then add some spinach and have it on some gluten free toast.

It doesn’t take long at all but it sure does fill me up! As I’m not vegan and allowed egg with my diet I usually add an fried or poached egg on the top so I have something to dip each bite into ☺️
